Chocolate Gluten Free Muffins
Ingredients
- 1 cup rice flour
- 3 tablespoons tapioca flour
- 1/3 cup potato starch
- *** 2 tablespoons Cocoa Powder
- *** 1/2 Cup Xylitol (Natural low glycemic sweetner)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon xanthan gum
- *** 3 eggs
- 3 tablespoons canola oil
- 2 cups water
- You can add chocolate chips or nuts to make them even yummier. These are best eaten on the same day or you can freeze them. I always heat mine for about 30 seconds before I eat them as I find it softens them up nicely. Enjoy! You can add more sweetner or sugar if you like them sweet. To make these into Mocha Muffins heat up 1/3 a cup of the water in the recipe and add 1 tsp of instant coffee and then add to recipe. I think I probably doubled the recipe to get nice HIGH muffins.
Directions
- Preheat oven to 350 spray muffin pan
- In a bowl, mix or sift together the rice flour, tapioca flour, potato starch, dry buttermilk powder, sugar substitute, baking powder, baking soda, salt, and xanthan gum. Stir in eggs, water, and oil until well blended and few lumps remain.

Homemade Hand Sanitizer Recipe

A safe alternative for hand sanitizer. I found my answer and it's cheap, effective and you can make it at home! I've been us Nutribiotic GSE (Grapefruit Seed Extract) for about 2 years. I make nasal spray with it to fight sinus infections, I buy GSE dish soap, I make my own capsule with the GSE gel and take it when I want to prevent sickness or nip in the bud and NOW I will make my hand sanitizer with it with the full confidence that this stuff works great and it's natural! Here is the recipe that I found for GSE sanitizer here is one place to get Nutribotic GSE or get it at you local health store and here is an online store for the gel.
Tell me if you try it out! I will go to my health store and pick up a little plastic bottle with a flip top spout for the sanitizer. Voila!

False Negavtive Celiac Test
I saw this article today and I wanted to share it with you. To read the rest of the article go to this Celiac Site If you suspect you have Celiac never give up on trying new doctors or being retested over the years. My son is allergic to ALL grains, including rice. He is ony 3 I got him tested for Celiac and came back negative. I will keep him on a wheat/grain free diet so that hopefully doesn't develop Celiac. I've also read if you have a biopsy done and they test a undamaged spot your test will come back false negative. My grandmother was misdiagnosed until this year in her 60's she has had colitis for years and has had many health problems that may have been avoided had she been properly diagnosed.

Summer time is BUSY
Sorry I haven't kept up here. Summer is a busy time and I hope to catch up soon.
Our diet hasn't been that great the past month and wouldn't you neither has our energy! Hopefully we can get back into the swing of things and good healthful eating.

Preventing Food Allergies
Here is some important information
Who gets food allergies? Can they be stopped?
Once you have food allergies, there are not any medicines that make food allergies go away. If you
are allergic to a certain food, the only way to make sure you won’t have a reaction is to never
taste, touch or even smell the food.
Moms who breast feed their babies might keep the babies from getting food allergies. Another way
to keep babies from getting food allergies is to wait to feed them foods that often cause food
allergies:
• Try to wait until babies are 6 months old before you give them solid foods. Wait until they
are 1 year old before giving them milk and other dairy (like cheese and yogurt).
• Toddlers should not eat eggs until they are 2 years old.
• Children should not eat peanuts, nuts or fish until they are 3 years old.
Talk to your doctor about a plan for introducing these foods.

Wheat free, dairy and egg free Oatmeal Waffles
Here is the recipe:
2 cups old fashioned oats
2 cups of water (I prefer rice milk)
1/2 banana (I substitute with canned pumpkin too)
2 tablespoons oil
1/2 tsp salt
cinnamon optional
(optional- I like to add 1 egg and 1 tsp. Baking powder)
Blend all ingredients in blender. Stand for 5 minutes. Spray waffle iron with non-stick spray and make waffles!

Food Allergies- IGE-IGG testing
These are some symptoms of Food Sensitivities and allergies as given by Meridian Valley Lab, which is where my family has received our FOOD PANEL tests from.
My husband was having a HUGE problem with dairy before the fungus link diet and now he is able to tolerate it better. My sensitivities are about the same, but my dairy allergy is better if I take PROBIOTICS before I have dairy which is just once every 4 days.

Blender Mayonnaise Recipe- QUICK & EASY
If you are on a candida diet or a fungus free diet you know that eating mayonnaise is a big no, no because store bought mayo contains sugar and vinegar.
I found this recipe for Blender Mayo on-line and according to my 2 year
old “It tastes Super Super good,” and we all really like it too! I added some minced garlic, dill and goat yogurt and blended it all together to make a great baking sauce for a fish casserole. Try it out and let me know what ya think!

Garden Ratoutille
My version of Ratoutille
1tsp Oregano
3 Small Onions Chopped
3 Garlic Cloves
1 Med/Large Chopped Eggplants
2 Medium Zucchinis
5 Two Ripe Tomates chopped
Olive Oil
In Olive oil sautee the all ingredients. Turn to low heat, place lid on pot turn and slow cook for approximately 15 minutes. My husband loved this Grass Fed beef patty with grilled vidallia onions with Ratoutille and a tossed salad.

What food are OK on Phase 1?
EGGS
FRUIT, berries, grapefruit, lemon, lime, green apples, avocado, fresh coconut
MEATS, virtually all meat including fish, poultry and beef
VEGETABLES, Most fresh, unblemished vegetables and freshly made vegetable juice (no potatoes,corn or mushrooms)
BEVERAGES, bottled or filtered water, non-fruity herbal teas, stevia sweetened fresh lemonade or limeade, freshly squeezed carrot juice (see below)
VINEGAR, apple cider vinegar OILS, olive, grape, flax seed, cold pressed virgin coconut oil NUTS, raw nuts, including pecans, almonds, walnuts, cashews, and pumpkin seeds. Stored nuts tend to gather mold, so be careful!
SWEETENERS, Stevia, Stevia Plus, birch tree extracted Xylitol
DAIRY, Organic Butter, Organic Yogurt, (use the following very sparingly) cream cheese, unsweetened whipping cream, real sour cream.
I've been using xylitol produced from Birch Tree not corn cobs as my sweetner. I also know it's safe for diabetics and it's all natural.
I highly suggest getting the Fungus Link books on audio. I bought the trilogy and it was expensive but worth every cent to be informed. I gave up on Doctors years ago as a matter of fact when I do go to my family Doctor the first thing she asks me is, What's your diagnosis? Thankfully she allows me to practice my natural medicine under her watchful eye.

Candida What is it?
Candida albicans prefers people. Candida enters newborn infants during or shortly after birth. What does a Phase 1 Dinner look like?
Yes you can have this on phase 1
This recipe came about after a day of really wanting some desert. Our family has dairy allergies so we used goat cheese, but you may try it with regular cream cheese.
1 lb Chevre Goat Cheese*
1 tsp Cinnamon
2 Eggs
1/4 cp Xylotol*
1/2 cp Walnuts chopped
1/4 Unsweetened Whip topping whipped mixed with 1 tsp of xylotol
Preheat oven to 350
combine the first 4 ingredients and mix. Meanwhile scatter walnuts over pie pan that has been sprayed with non-stick spray. Pour ingredients over walnuts bake until set. 20-30 minutes
Wait for pie to completly cool and top with whipped topping and sprinkle with more powdered xylotol.
* most health food sections have xylotol which is an all natural sugar that tastes great and prevents cavities and has NO side affects.
* Not all chevre are the same. Some have a powdery after taste which can affect the tast of this pie.
Well I have to admit it's not gourmet, but it served it's purpose!

Sweet Breakfast with No Guilt
I made this for breakfast one day after I was tired of having savory eggs everyday. I whisked some eggs with cinnamon and xylotol. Next, I reduced some chopped green apples with the juice of one orange. I didn't find out until after I made it that oranges are not on either phase 1 or phase 2. However you can still make the reduction with a little bit of water and green apples.
