postheadericon Mock Potatoes & Special Rub Chicken- Phase 1

Nothing beats Mock Potatoes on Phase 1 since you can not eat the real deal.

Super Simple Mock Potatoes (They taste SO good, you will be surprised. Note: they have to be seasoned right to have the POW Punch)
As many as you would like Heads of Cauliflower
Boiled in with salt until tender
When tender add to your blender, I use a Vitamix with a smoothie wand to push the cauliflower down to blend it consistently and so that they are not too smooth.
Add the following into the blender butter, salt, pepper, 1-2 cloves of garlic.

Do NOT add any extra liquid or they will be to runny.  They have enough moisture already. I like to take tongs and gently squeeze the excess water out before I blend for an even better texture.
Serve with a pat of butter and some extra salt if necessary.

SPECIAL RUB CHICKEN

any size chicken, pat dry.  Take a chunk of butter and rub it under all the chicken skin and on top and in the cavity. Next rub with my Special Mix-
Kosher Salt
Basil
Pico Lemon (Mexican brand lemon/paprika mix) 
Pepper
Cinnamon (makes it special)
mix all together and rub the chicken the same as you did the butter.


Bake Chicken covered for the first 40 minutes and the last 20 minutes uncovered if your bird isn't too big.

postheadericon Bright Beef Stew- Phase 1

Day two into our cleanse on Phase 1. I came up with this recipe that is pretty tasty.  My measurements are seldom exact so use it for inspiration.


Beef Roast (I think it was about 2-3lbs)
1 cup shredded Cabbage
1/2 chopped Onion
3 Chopped Carrots
1/2 diced Green Pepper
1 tb Basil
2 garlic cloves minced
2 Bay leaves
Salt/Pepper to Taste

Spray the bottom of your crockpot, add meat layer cabbage and all the other above ingredients. Fill pot with water 1-2 inches below rim and cook for 10 hours on low.

I made my stew over night and 2 hours before lunch I transferred everything to a heavy stove top pot and added
Frozen Brocolli
Frozen Peas
2 small heads of cauliflower chopped
more water
salt/pepper
 Zest of 1 lemon plus Juice this is where the (Bright comes into the name)


Simmer all on low for at least one hour or more. Serve with shredded cabbage on top and maybe some onions. Enjoy! :)

postheadericon Blender Mayonnaise Recipe- QUICK & EASY


If you are on a candida diet or a fungus free diet you know that eating mayonnaise is a big no, no because store bought mayo contains sugar and vinegar.
I found this recipe for Blender Mayo on-line and according to my 2 year old “It tastes Super Super good,” and we all really like it too! I added some minced garlic, dill and goat yogurt and blended it all together to make a great baking sauce for a fish casserole. Try it out and let me know what ya think!

My version of Ratoutille
1tsp Oregano
3 Small Onions Chopped
3 Garlic Cloves
1 Med/Large Chopped Eggplants
2 Medium Zucchinis
5 Two Ripe Tomates chopped
Olive Oil
In Olive oil sautee the all ingredients. Turn to low heat, place lid on pot turn and slow cook for approximately 15 minutes.









My husband loved this Grass Fed beef patty with grilled vidallia onions with Ratoutille and a tossed salad.

postheadericon What does a Phase 1 Dinner look like?

I have to make sure I keep my husband happy with this program or he might throw it out the window. This night I made curried chicken with asparagus steamed in some of the chicken broth and lemon juice, plus a salad with Annie's Green Garlic dressing (this is vinegar free dressing- which is not allowed on the diet) sprinkled with parmesian cheese.

Goat Cheese Cake

This recipe came about after a day of really wanting some desert. Our family has dairy allergies so we used goat cheese, but you may try it with regular cream cheese.

1 lb Chevre Goat Cheese*
1 tsp Cinnamon
2 Eggs
1/4 cp Xylotol*
1/2 cp Walnuts chopped

1/4 Unsweetened Whip topping whipped mixed with 1 tsp of xylotol

Preheat oven to 350

combine the first 4 ingredients and mix. Meanwhile scatter walnuts over pie pan that has been sprayed with non-stick spray. Pour ingredients over walnuts bake until set. 20-30 minutes
Wait for pie to completly cool and top with whipped topping and sprinkle with more powdered xylotol.

* most health food sections have xylotol which is an all natural sugar that tastes great and prevents cavities and has NO side affects.
* Not all chevre are the same. Some have a powdery after taste which can affect the tast of this pie.

Well I have to admit it's not gourmet, but it served it's purpose!

postheadericon Sweet Breakfast with No Guilt


I made this for breakfast one day after I was tired of having savory eggs everyday. I whisked some eggs with cinnamon and xylotol. Next, I reduced some chopped green apples with the juice of one orange. I didn't find out until after I made it that oranges are not on either phase 1 or phase 2. However you can still make the reduction with a little bit of water and green apples.
